Chef Jason Manson, a Sabahan, started his internship as a kitchen apprentice 20 years ago at the young age of 20. He has worked in established chain-brand hotels in Beijing, Melbourne and Singapore.

 

Along this journey, he has experienced the rich diversity of food culture from other races, including ethnic cooking. Chef Jason has also cooked for royalty, celebrities and artistes. 

Today, Jason runs a full-time food consultancy company which specialises in doing “Research and Development” for brand concept and ideas, conducting professional training and cooking demonstrations as well as collaborating with commercial and corporate food brands by providing food-styling services.

RESEP CHEF:

LAMB PANSUH

Borneo style cooking lamb meat stuffed in the bamboo stalk filled with local ingredients and covered with tapioca leaves.

BAHAN:

  • 500gm Chilled Halal Australian Lamb cubes

  • 2 stalks Lemongrass, finely chopped

  • 2 cloves Garlic, finely chopped

  • 3cm Ginger, finely chopped

  • 20gm Daun Kesom, finely sliced

  • 1 stalk Bunga kantan (Ginger torch), finely chopped

  • 50gm Cassava leaves, finely chopped

  • 10gm Salt 

  • 5gm Pepper

  • 100ml Water 

  • 1 Buluh lemang (Bamboo), 6 inch size

CARA MEMASAK:

  1. Fill the bamboo with water for at least 30 minutes to 1 hour for cleaning purpose and to ensure water will be easily absorb inside the bamboo stem. Set aside.

  2. In the mixing bowl, put the lamb cube, lemongrass, garlic, ginger, daun kesom, bunga kantan, cassava leaves, salt and pepper. Mix all the ingredient well.

  3. When all the ingredients are properly mixed, put the mixture inside the bamboo that was cleaned earlier on. Fill up the mixture inside bamboo till almost full. Cover the top of the bamboo with some of the cassava leaves.

  4. Set the combi into a steam baked mode at 180°C for 45 minutes. Cook the dish inside the combi oven and ensure the bamboos are in standing mode. 

  5. Once the dish is cooked, slowly remove the cassava leaves that covered the top part of the bamboo and serve the cooked dish with steamed fragrant rice.
